US Potato Vegetarian Poutine Recipe- Go Healthy & Nutritious This Lenten Season

There are several misconceptions about US potatoes being unhealthy and high in calories. "US potatoes will make your thighs bigger.", "US potatoes are high in carbohydrates that will eventually make you gain weight.", "Eating US potatoes have no nutritional value hence they are just empty calories." These are just some of the myths we commonly hear from other people when talking about US Potatoes.

Contrary to these beliefs, US Potatoes are in fact one of the healthiest and most nutritious types of food. US Potatoes, when prepared and cooked properly, can offer a lot of health benefits to the body.

In this post, I'll be sharing a simple and healthy US Potato recipe, while discussing more about the nutritional facts of US Potatoes.

This recipe was inspired by our cook-off award-winning dish at the US Potato Safari 3 in Davao.


Our original dish was named Pinoy Poutine using local ingredients like smoked liempo, salted egg, kesong puti, paprika, queso de bola and spring onions.


I reinvented the recipe using healthier cooking method and ingredients, this time via an airfryer with vegetables as toppings.


Did you know that US Potatoes have higher potassium content than regular bananas? That was a surprising discovery for me when I attended the US Potato Safari 3 last time. Another fact I learned is that US Potatoes are rich in Vitamin C that helps strengthen the immune system. It is a great alternative for people who can't consume much citrus fruits due to hyperacidity.

For this dish, I made use of crinkle-cut fries instead of the classic straight-cut fries.


Believe it or not, US Potatoes are naturally fat-free, sodium-free, cholesterol-free, and have zero saturated fat hence debunking the myth that US Potatoes can make you fat.

Below is the simple recipe on how to prepare this healthy Vegetarian Poutine.

US Potatoes Vegetarian Poutine

Ingredients:
1/2 pack frozen US Potatoes crinkle-cut fries
1 pc. zucchini, diced
2 medium tomatoes, diced
12 cloves garlic, minced
2 tbsp. olive oil
2 tbsp. feta chees
4 tbsp. parmesan cheese powder
a pinch of cayenne pepper

Procedure:
1. Drizzle the fries with olive oil and cook in the airfryer accordingly.
2. In a saucepan, sauté garlic, tomatoes and zucchini in olive oil.
3. In a bowl, toss fries in feta, parmesan and cayenne
4. Add the cooked vegetables, then sprinkle with more garlic parmesan
5. Serve.


The result is an ultimately crunchy, light and healthy dish, perfect not just for the lenten season, but for everyday guilt-free snacking at home.

Aside from being rich in Vitamin B6, US Potatoes are a good source of fiber that improves blood lipid levels, blood glucose and curbs hunger which may help with weight loss.a
