Away from the bustling commercial streets of Pasig, is a newly opened restaurant that offers contemporary artisan dining in a modern-industrial setting. Privatus Private Dining, an unassuming establishment tucked in a warehouse, banks on their radical interpretation of food, presentation, and service.
Helming the kitchen, is the co-owner himself, Chef AJ Reyes, who trained under Chef Chele Gonzales of Vask, and Chef Bruce Rickets of Sensei Sushi, Mecha Uma, and Ooma fame.
Last week, we were invited to Privatus' media night for a private artisan dinner featuring Chef AJ's specially crafted menu, paired with cocktails concocted by resident mixologist and Privatus Dining F&B manager Mark Marquez.
Guests were welcomed with a glass of bubbly Espuma & Berries to complement the equally flavorful and savory tapas served before dinner.
The Sisig Croquetas (P245) are deep-fried balls with creamy sisig filling served with spicy mayo, while the Squash Blossoms (P200) are stuffed with seafood mousse served with uni mayo.
The course started with a cold appetizer of Shrimp & Singkamas (P295)- cabbage-wrapped shrimp topped with thin slices of pickled turnip and radish in aligue sauce.
For main course, the Inasal Stew (P385) was our personal favorite. Tender smoked chicken sous-vide in a special stock enhanced with a touch of apple cider vinegar.
It went perfectly well with the bowl of Fried Garlic Risotto (P185) that was also quite enjoyable to eat as it is. Though texture was not too creamy, the risotto was cooked to al dente with a nice firm bite.
The Local Wagyu (P985) features Kitayama striploin with glazed onions and assorted mushrooms.
We had our steak cooked to medium, and it was perfect! Our knives managed to cut through the steak with minimal effort, exposing a warm reddish-pink center.
While the first dessert was refreshing, we liked Privatus' signature Fried Ice Cream (P205) better. The unique salty-sweet combination of homemade mango ice cream, topped with fried pandesal and shoestring sweet potatoes, gave us a nostalgic feeling of childhood in every spoonful.
Privatus also houses a fine selection of hard-to-find wines, cavas, whiskeys, spirits, and beers.
