Doña Elena, the proudly homegrown and leading olive oil brand in the country, recently partnered up with loyal client and longtime Doña Elena user, 49-B Heirloom Kitchen, to come up with a festive holiday menu using various Doña Elena products.
Chef Erika Aquino, executive chef of the restaurant, gamely accepted the challenge, and prepared a full menu of exciting dishes fit for the upcoming holidays.
This special menu will be available at 49-B Heirloom Kitchen from November 20 to January 2017.
First is a starter of Grilled Shrimp on Patacones (P285)- a South-American inspired appetizer, made with twice-fried plantain slices, pico de gallo, tapenade mayo, and grilled shrimps, served with a chilled cucumber yogurt shooter on the side. Both are made with Doña Elena Extra Virgin Olive Oil, which is ideal as salad dressing, bread dip, and to drizzle cooked food.
For mains, Chef Erika prepared three equally mouth-watering dishes of chicken, beef, and fish.
49-B Heirloom Kitchen’s Olive and Chorizo Stuffed Roast Chicken (P550) features a light and healthy dish bursting with Mediterranean flavors. It uses ingredients such as olive oil, olives, spices, and chorizo perfect for that Thanksgiving centerpiece.
The Cuban Beef Stew with Yellow Rice (P340) served with a side of black beans and fried saba, is a dish that highlights the rich and gastronomic profiles of Latin-America. The savory beef stew represents the rich and flavorful profile of Spanish cuisine, while the fried saba represents the tropical flavors of the Caribbean. Together, it creates this timeless recipe you wouldn't dare miss.
My personal favorite, the Tilapia Fillet with Red Onions and Relish (P420) is a harmonious fusion of South American and Mediterranean flavors, served perfectly with chimichurri and refreshing Greek orzo salad.
Save the best for last as Chef Erika whips up her very own Cheese Panna Cotta (P225)- a labor of love resulting in a creamy and velvety smooth custard, drizzled with Doña Elena Olive Oil and a zest of lemon.
